This wedding is one of my favourites because it allowed us to utilize all of our management experience and really take control during a complex order of service.Our role
: To top up wine glasses throughout and serve a 3 course Thai wedding breakfast to 170 guests.
Upon arrival we got to work moving the tables, the tipi was far too small for the amount of guests so we had to map out a 'one way' system to ensure the order of service ran as smooth as possible.
During set up Brian had a long discussion with the chef to plan and organise the order of service. Timings were strict for this wedding and due to the limited catering space the wedding breakfast needed to be sharp as the band was arriving at a set time. To make our life impossible there were no table numbers and no where we could add them. So we had to each have a map and number tables. As soon as table 17 were getting their first course tables 1,2,3 needed their first course clearing. We split into 2 teams lead by Leah & Brian, during service we also needed designated waiting staff to continuously top up wine glasses throughout courses.
With a strict plan in place the service began. Everything was going perfectly when the electrics cut out. Food stopped leaving the kitchen and only half the tables had their main course.
Brians' team assisted the kitchen as much as possible whilst Leah's team continued serving drinks and organised back of house/clearing area.
After an hour the service was back on and we jumped into action. Luckily due to our high standard of training we knew by sight which tables had been served which course as our staff are trained to remove cutlery during clearing relating to that course.
We love a challenge and this wedding demanded every bit of our skills and expertise to execute.

Adam and I just wanted to touch base to say how impressed we were with the events team that attended our function on Saturday in Cookham Dean. Lead by Leah and Brian they could not have been more professional or helpful and nothing whatsoever fazed them or was a problem. The whole team were truly delightful and we will certainly be recommending and using you again.
